Instructions
-
-
Line a loaf pan with parchment paper.
-
In a food processor, pulse walnuts and pecans until coarsely ground (avoid over-processing into nut butter).
-
Add 1½ cups chopped dates, cacao powder, maca powder, and sea salt. Process until combined. If the mixture is too crumbly, add remaining dates and process until a sticky dough forms.
-
Press the dough evenly into the loaf pan to create the base layer. Set aside.
-
For the frosting: Melt coconut oil gently (stovetop or microwave) until liquid but not hot. Let cool slightly.
-
In a small bowl, whisk together melted coconut oil, cacao powder, honey, and vanilla (if using) until smooth. Pour over the brownie base.
-
Sprinkle with cacao nibs, bee pollen (if using), and superfood toppings.
-
Chill in the fridge or freezer until set (1-2 hours).
-
Slice into 8-10 bars. Serve immediately or store in the fridge (up to 4 days) or freezer (up to 1 month).
