Raw…chocolate…amazingness! These little fudge squares are choc-full of healthy fats, superfoods and FUDGY flavor. A raw brownie base with a thick chocolate ganache is then sprinkled with local bee pollen and crunchy cacao nibs for a fun flair.

Just one square of this double-layered dessert is not only filling but satisfying AND allergen-friendly. If you leave out the bee pollen and swap the honey for coconut nectar or agave, these bars are vegan…not to mention grain-free, egg-free, dairy-free, gluten-free, Paleo-friendly, soy-free, no-bake, flour-less, raw, sugar-free…and I promise, you won’t miss ANY of it.

Description

These no-bake Superfood Raw Fudge Brownies are rich, chewy, and packed with nutrient-dense ingredients like cacao, dates, and seeds. They're vegan, gluten-free, and naturally sweetened — a guilt-free dessert or energy-boosting snack.

Instructions

    1. Line a loaf pan with parchment paper.
    2. In a food processor, pulse walnuts and pecans until coarsely ground (avoid over-processing into nut butter).
    3. Add 1½ cups chopped dates, cacao powder, maca powder, and sea salt. Process until combined. If the mixture is too crumbly, add remaining dates and process until a sticky dough forms.
    4. Press the dough evenly into the loaf pan to create the base layer. Set aside.
    5. For the frosting: Melt coconut oil gently (stovetop or microwave) until liquid but not hot. Let cool slightly.
    6. In a small bowl, whisk together melted coconut oil, cacao powder, honey, and vanilla (if using) until smooth. Pour over the brownie base.
    7. Sprinkle with cacao nibs, bee pollen (if using), and superfood toppings.
    8. Chill in the fridge or freezer until set (1-2 hours).
    9. Slice into 8-10 bars. Serve immediately or store in the fridge (up to 4 days) or freezer (up to 1 month).
